Recent Eats + Leaps

Hello dears! How is everyone this week?! I, myself, am doing pretty well. We’ve made it to March, the schedule is starting to fill up with exciting spring and summer activities, and I start half-marathon training next week, for the Brooklyn AirBnb half on May 21! Who else has a run coming up? I am not doing a meal planning post this week because I had the pleasure of having my parents come visit Boston, and although I love their company I get even more excited for the home favorite cuisines they bring. 😉 Just kidding. Kind of. There is a place near my parents’ home in New Jersey called Veggie Heaven, which is a vegan Chinese food place. I typically get the steamed “chicken” with brown rice, veggies and brown sauce. The fake meats are a mixture of seitan, chopped up veggies, and tempeh. Every time I go I ask if they can become a national chain, and they always laugh and say no. It’s incredible, and I was lucky enough that my parents brought me some meals from there that I could bring to work for the week! Additionally, my mom brought me SIX different types of cheeses.

Cranberry cinnamon cheddar, orange goat, wasabi gouda, one not in English that I’m unsure about, honey goat, Australian cheddar. I will definitely keep you guys posted on what I make with all of these wonderful cheeses.

To supplement the awesome meals my parents brought me, I made some roasted veggies for the week- asparagus, brussels, and shrooms.

I also made a new smoothie combo that is out of this world. It’s actually the same as my typical smoothie (blueberries, banana, spinach, coconut oil, chia seeds, flaxseed, almond milk, honey) but instead of blueberries I used strawberries. It tasted like icecream, even with the spinach in it. Highly recommended! I also have a few favorite snacks this week- Purely Elizabeth granola, the blueberry flavor, and rice cakes with peanut butter, jelly and chia seeds on top.

My time with my parents was so wonderful, yum filled and heartwarming. When they first got here Saturday morning, we went to Sofra, a Turkish bakery in Cambridge. I got the shashouka, a baked egg and tomato sauce, middle Eastern inspired dish.

So pretty, delicious, and a little spicy! Then we walked around Jamaica Pond, enjoying the fresh air and the millions of puppies running around. That night, we went to Park Restaurant in Harvard Square for dinner. They bring out baked pita and several different cheeses to dip into, for free – what could honestly be better? And for my meal I got honey-jalapeno glazed salmon with brussels and parsnips. It was really flavorful and colorful; however I was hoping they would secretly add some mashed potatoes to my plate, better luck next time! The next morning we went to Five Horses Tavern in Davis Square, where I got an omelette that had mushrooms, spinach, gruyere, and BEETS, which I’ve never had in an omelette before and it was just as unique and brilliant as it sounds. We went to the reservoir in Cambridge to walk/run around before they left. Did any of you eat anywhere stellar this past week?

Earlier this week was the Leap year. I hope that this special, one-in-four-years day inspired you to take a chance and do something that challenged you. Since this day happened on Monday, I encourage you to think about the idea of the Leap year, and taking a leap, extending through the rest of this week. Remember that you’re the only one holding yourself back. My leap of the week is starting to look into science courses that I can take online, because I am considering going back to school for public health/nutrition. The future can look a million ways and can change in a millisecond, so I am taking it one day at a time, but at this moment this seems right to me.
