Happy Thursday guys! I hope this week is bringing you lots of peace and joy. If you haven’t been able to tell, I have been all about the chickpeas and Greek flavors lately. As a vegetarian (or pescatarian if you will, but that word sounds like a scary dinosaur so I don’t like it), I sometimes struggle to find filling, protein-packed meals that keep me energized for a few hours. Chickpeas are little superheroes who help me solve that problem. They contain lots of fiber (encourages digestion and lowers risk of diabetes), lots of vitamins, inflammatory and cholesterol lowering properties, and a great amount of protein! Chickpea noodles! Nothing but good, clean ingredients in this power-packed box. And today I have a perfect, bright meal to remind you that spring is right around the corner.
Greek Pasta Salad
What you need:
- 1 box chickpea pasta (or any desired)
- 1 laaaarge cucumber
- 1/2 sweet onion
- 1 red pepper
- 1 cup crumbled feta cheese
- 2.5 tbsp red wine vinegar
- squeeze lemon juice
What you do:
Boil the pasta. Cut up the veggies.
When the pasta is ready, mix the veggies, cheese, and dressings into the noodles. Put in the fridge for 2 hours to let cool. And enjoy!
