Meal Prep Monday

Hi guys! Happy first Monday of the year, AKA the day people actually begin their resolutions. The gym was PACKED this morning, which is always a sign of early January. I thought a nice way to ring in the new year on my blog would be to share my meal prep for the week. I love meal prepping for lunches, snacks and dinners for the week because it saves so much time, so much money, and so much energy. You don’t have to come home from work starving and ready to eat the whole house, because you already have your dinner prepared and (almost) ready to go! You don’t have to stress out about going out to get your lunch when you’re having a really busy work day, because it’s already in the fridge waiting for you! I can continue on and on about the reasons why meal prep has saved my nutritional life… but I think most know the benefits, but sometimes the time consumption is what stops people from going all in on this meal planning jazz. I totally get that, which is why 2016 will be all of our’s year to make meal prepping quick, simple, and FUN. I’m going to provide you with the meals I chose to make for the week, including the recipes, and hopefully some will tickle your fancy! Let’s get into it. This week was chickpea, carrot and onion burgers with roasted brussel sprouts for lunch, and quinoa+cheese with broccoli, cauliflower, and onions for dinner.


Chickpea, Carrot and Onion Burgers

What you will need:

  • 1 can chickpeas/garbanzo beans (means the same thing)
  • 10 baby carrots
  • 1/2 medium sweet onion
  • 1 egg
  • 3 tbsp flour
  • several pinches sea salt
  • olive oil
  • several pinches cumin

What you do:

  • Chop the carrots and onions into small pieces. Put to the side.
  • Put remaining ingredients into the food processor and blend up.
  • Add the carrots and onions to mixture.
  • Heat olive oil on a large pan, and start cooking the burgers. I let the burgers cook for 6-7 minutes on each side. And that is literally it. You don’t even need any condiments; these burgers are so flavorful on their own. Makes about 10 medium sized burgers.


What you will need:

  • 1 cup quinoa
  • 1 bag frozen winter veggie mix (comes with broccoli and cauliflower)
  • 1/2 medium sweet onion
  • 1 egg
  • olive oil
  • 2 tbsp flour
  • big splash milk (I used almond)
  • 1 1/2 cup cheddar cheese

What you do:

  • Preheat oven to 350º.
  • Cook quinoa following the quinoa package.
  • Heat olive oil in medium pan and saute broccoli, cauliflower and onion on top of stove until veggies start to get soft and cooked.
  • Mix the veggies in with the quinoa in an oven-friendly dish. Additionally, mix in the flour, egg, milk, and cheese.
  • Cook in the oven at 350º for 7 minutes. And voila! Beautiful, protein and vitamin-filled comfort food to get through your winter days.
